I lifted up the skin and threw plenty of wrc in there, and coated the outside.
made a up a basting sauce of bacon grease, cider vinegar, wrc, and maple syrup. I kept throwing that on during the whole cook.

I wanted a brisket, or a butt, but they were out. They always have chuck tho, so i had him cut me off a 9 lber. Grabbed a rack of spares too.

Thanks to larry for the hints/tips on this cook. Reverse sear eye of round.
i rubbed it with evoo, salt, pepper, garlic, onion, corriander, and marjoram.

Threw these on around noon over lump, 2 hickory and 1 cherry..
wrb on one and montreal on the other
3 hours later ... Foiled and back on.
running about 275-280 with no water pan.

Had some leftover brisket point and some 1st slices of flat in the freezer, some corn tortillas, so decided to throw together some nachos. Man were they good!
i quartered the tortillas and deep fried them in veg oil.

Yeah, i'm gunna try the high temp method.
6 pound packer rubbed with wooster and wolfe rub bold.
